Wiki's, sites where every user can edit everything, are everywhere.  Most people are aware of wikipedia , the open source encyclopedia project.    Download and install your own wiki from MediaWiki.  Check out MediaWiki's cheatsheet for formatting text within a wiki.  MediaWiki also provides a complete installation guide.
